What to tell your kosher coordinator

A one-page notice for the production floor. Put your coordinator's details on it, print it, and pin it where the changes actually get made.

The change that causes a problem is almost never careless. It is made in good faith by someone improving a process, who had no reason to think it was a kosher decision — a different free-flow agent in the salt, a second supplier for the same material, a line run on a Sunday to catch up.

This plant

Buying and goods-in

  • A new supplier for anything — even the identical material under the same spec
  • An existing supplier making it at a different site
  • Any reformulation, however small, including a carrier, free-flow or anti-caking agent
  • A new ingredient, processing aid, culture, enzyme or flavour
  • Bulk liquid arriving from a new haulier, or a tanker whose previous cargo is unknown

On the line

  • A line running a product it has not run before, certified or not
  • A change to a cook, bake or heat step — temperature, timing, or who operates it
  • Production scheduled outside the normal pattern, including a new shift or a weekend run
  • Rework or reprocessing of product back into a batch
  • New, rebuilt or borrowed equipment, including a replacement part on a food-contact surface

Engineering and cleaning

  • A change to the cleaning cycle, the chemicals used, or how a line is cleaned between products
  • Work on steam, water or compressed air that reaches product
  • A temperature excursion on a heat step, even a brief one that corrected itself

When something has gone wrong

  • The wrong ingredient added, or added to the wrong vessel
  • A spill, a cross-contact, or a vessel used for the wrong product
  • Anything at all that someone is unsure about
