Is buffalo kosher?

“Buffalo” means two different animals, and the answer is the same for both: kosher species, but kosher meat only after shechita under supervision. In North America the animal people mean is usually the bison. The true buffalo — the water buffalo behind mozzarella di bufala — is a different animal with the same signs and a very different place on the shelf.

Why it's not that simple

The word is doing two jobs, so start by separating them:

  • The Torah gives two physical signs for a kosher mammal: split hooves and chewing the cud. Both can be checked directly, which is why mammals — unlike birds — do not require a tradition to establish the species. Why mammals differ from birds →
  • If you mean the American buffalo, you mean the bison, and that question has its own answer. Is bison kosher? →
  • The water buffalo has both signs too, so on the view of the poskim generally it is a kosher species with no tradition required. The Chazon Ish is the notable exception, holding that mammals need a tradition as birds do, and some follow him.
  • There is a further question the signs do not settle: whether an animal counts as a b’hemah (domesticated) or a chaya (wild). That is not academic — it decides whether the blood is covered after slaughter and whether the chelev prohibition applies. Where it is unresolved the practice is strict on both counts.
  • Water buffalo mozzarella is the form most people actually meet, and it is a dairy question rather than a meat one: it needs certification like any cheese, for the coagulant as much as the milk. Is cheese kosher? →
  • Buffalo meat of either kind is very rarely shechted commercially, so assume what is on sale is not kosher unless a symbol says otherwise.

How to actually know

The only reliable way to know a specific product is kosher is a trusted kosher symbol on the package. Never rely on the ingredient panel, the brand’s reputation, or the name on the front. When you’re unsure about a product or a symbol you don’t recognize, ask your rav.

And it can change

Availability shifts. A producer may run a certified program one season and not the next — check the hechsher on the specific package.

Whichever animal you mean, the species is not the question — the symbol on the specific package is. Buffalo mozzarella and buffalo meat both need one.

For manufacturers

Water buffalo dairy is a real kosher opportunity and largely uncontested; buffalo and bison meat are niches for the same reason, that almost nobody is running a certified program.
